Jack By The Hedge

The Summer edibles are starting to appear in the hedgerows and here's a favourite - Jack By The Hedge or wild garlic mustard (Alliaria petiolata). 



Also known as Hedge Garlic, Poor Mans Mustard, or Penny Hedge, this is a tasty plant that is great in salads and green sauces, pestos and soups. As the name suggests, it does carry flavours of garlic and mustard and it's quite peppery and bitter. But used in the right proportions, it's a great flavouring and a lot of the bitterness is lost in cooking. 


The young first leaves are best. You can also eat the flowers and the seeds can be used as mustard. The roots at the end of the second years growth taste like mild horseradish. 

It's also hard to mistake for anything else once the distinctive four petalled flowers emerge.
